We are starting another Whole 30 challenge with our CrossFit community next week, and it’s stirred up a lot of conversations about our favorite Paleo recipes. When we are “on”, we eat a close-to-Paleo diet during the week, and then on the weekend we usually do a mix of Paleo and a few “bad” meals {aka Chuy’s ?}. We were “on” for most of 2015, but the last few months we have not been great about sticking to Paleo. Well, that’s all about to change because during the Whole 30, we won’t be doing any “cheat meals”! YIKES. This means I have to get a lot of good recipes ready for the next 30 days!
Here are our tried and true favorites—-

Breakfast
Most mornings we do some combo of Eggs/Bacon/Sausage/Sweet Potatoes/Butternut Squash in a scramble or an omelet. I have learned to make a TON of roasted sweet potatoes or butternut squash on Sunday night to have ready for the week, that way I can just throw them in a pan with the eggs and meat! Makes it so much quicker during our mad morning rush! Other things we have had…
Fruit smoothie- frozen banana, frozen blueberries, almond milk, almond butter, & honey (when not on Whole30)
Lunch/Dinner
Some weeknights we will have grilled steak, fish, salmon, or chicken w/ sautéed or roasted veggies (I get ideas for sides from the same websites above), then I’ll throw in 1-2 of the recipes below or find a new one to try each week. We end up eating lots of leftovers too, so I usually cook dinner 5 nights a week and that gets us through most of our lunches and dinners.
