I forgot to take a before picture, but I made these little appetizers to take to a Halloween party last weekend and they were a hit! I couldn’t find a recipe exactly like what I was thinking, so I just made this one up. I thought I better blog about them before I forgot what I did! They were super easy!
Queso Cups {Makes 75 bite-sized cups}
1 lb pork sausage
1 lb ground beef
1 package taco seasoning
3/4 cup water
8 oz velveeta, cubed
1 can Rotel
1 cup sharp white cheddar cheese, shredded, plus more for topping
5 packages mini phyllo cups
Preheat oven to 350. In a large skillet, brown sausage and beef together over medium heat. Stir in taco seasoning and 3/4 cups water, bring to a boil, then turn to low and simmer for 2-3 minutes. Add Velveeta and Rotel, stirring constantly until cheese has melted. Add cheddar cheese and continue to heat through until the cheddar has just melted. Spoon 1 tablespoon of the sausage mixture into each mini phyllo cup. Sprinkle cheese on top of each cup. Arrange filled cups on a baking sheet and bake for 10 minutes, or until just starting to turn golden brown.
