Grilled Citrus Salmon

1 Tbl. coconut oil
3 lbs. fresh salmon fillets

For sauce:
1 ½ Tbl. freshly-squeezed lemon juice
2 Tbl. olive oil
2 Tbl. Dijon mustard
4 garlic cloves, minced
1/2 tsp. cayenne pepper
1/2 tsp. salt
1 tsp. dried basil
1 tsp. dried dill

In a small sauté pan over medium heat, combine all ingredients for sauce. While stirring, bring to boil. Reduce heat and simmer for 5 minutes, then turn heat off.

Salt and pepper both sides of salmon fillets. Place a large cast iron skillet over medium-high heat with 1 tablespoon of coconut oil. Place the salmon pieces in the hot skillet. Let the salmon cook for 7-8 minutes or until the edges begin to become white and the salmon has cooked halfway through. Flip and cook other side for another 7-8 minutes or until fish is flaky and light pink in color.

Turn heat off and pour sauce over salmon in skillet. Serve immediately.
